Carrot soup flavored with fresh orange juice

Serves 6
INGREDIENTS
1,5 kg carrots, coarsely chopped
2 red onions, coarsely chopped
2 garlic cloves, crushed
olive oil
2,5 ltr vegetable stock
curcuma
black pepper
1 orange, freshly squeezed juice
fresh parsley
METHOD
Heat the oil, add carrots, onions and garlic and sauté,
stirring occasionally, for 3-5 min.
Pour in the stock, curcuma and black pepper, bring to the boil
and simmer for about 15 min.
Puree the soup and add the orange juice.
Garnish with fresh parsley or coriander.
Enjoy !
